Classic Beef and Barley Soup Ingredients:
- 1 1/2 lbs beef stew meat, cut into cubes
- 1 cup pearl barley
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 carrots, sliced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 10 cups beef broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a spacious pot, warm the vegetable oil on medium-high heat. Add the beef cubes and cook until browned on all sides, about 6-8 minutes. Remove the beef and set aside.
- Next, incorporate the chopped onion, diced carrots, celery, and minced garlic into the pot. Sauté until softened, about 5 minutes.
- Return the beef to the pot, then add the beef broth, bay leaves, thyme, and soy sauce. Bring to a boil.
