Instructions:

  1. To begin, set your oven to 400°F (200°C) and prepare a baking sheet with parchment paper to prevent sticking.
  2. In a medium saucepan, combine water, butter, and a pinch of salt, and bring the mixture to a rolling boil.
  3. Add the flour all at once, stirring continuously until the mixture forms a ball. Remove from heat.
  4. After removing it from the heat, let it cool slightly—around 5 minutes—then mix in the eggs one by one, making sure to beat thoroughly between additions until the dough is smooth and glossy.
  5. Drop spoonfuls of the dough onto the baking sheet, leaving enough space between each for expansion.
  6. Scoop or pipe the dough onto the prepared sheet, then bake for 20-25 minutes or until the puffs are beautifully golden and puffed up.
  7. Whip the heavy cream, powdered sugar, and vanilla extract together in a bowl until stiff peaks form.
  8. Slice the tops off the cooled puffs, fill them with the whipped cream, and replace the tops. Dust with powdered sugar before serving.
