Ingredients
1 cup graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
1 can (15 ounces) pumpkin puree
2 large eggs
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 can (12 ounces) evaporated milk
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper for easy removal.
In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until the crumbs are evenly coated, then press the mixture into the bottom of the prepared pan to form a crust.
In another large bowl, whisk together the pumpkin puree, eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
Gradually add the evaporated milk, whisking until well combined.
Pour the pumpkin filling over the crust in the baking pan and spread it evenly.
Bake in the preheated oven for 45-50 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
Let the bars cool fully in the pan before serving. Once cooled, slice into squares and serve. Refrigerate any leftovers.
