Christmas Mini Muffins Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • 1 cup dried cranberries or raisins
  • ¼ cup chopped walnuts (optional)
Festive Spiced Mini Muffins

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a medium bowl and whisk until well blended.
  3. In another large bowl, beat the softened butter and brown sugar together until the mixture becomes light and airy.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Slowly incorporate the dry ingredients into the wet mixture, alternating with the buttermilk, starting and finishing with the flour mixture.
  6. Fold in the dried cranberries (or raisins) and walnuts.
  7. Divide the batter evenly among the cups of the prepared muffin tin, filling each about three-quarters full.
  8. Bake for 12 to 15 minutes, or until a toothpick inserted into the center of each muffin comes out clean.
